What used to be in the soil that has since disappeared

The problem isn't on your plate, but beneath your feet. To understand why food is less nutritious, you have to look at the soil, humus, and fulvic acid.

We used to eat differently. Not necessarily healthier, but the soil did the heavy lifting for us.
Healthy, living soils were full of humus: the dark, rich material created by the decomposition of plants and microorganisms. However, an American government commission warned about the decline of soil life as far back as 1936—ninety years ago.

What used to be in the soil and is now gone:

1. Trace elements

These are minerals we need in tiny amounts, but which are crucial for enzymes, hormones, and energy production.
Abundant in the past: due to natural weathering of rock, biodiversity, animal manure, and compost.
Often depleted now: due to synthetic fertilizers (which mainly contain nitrogen, phosphorus, and potassium, or NPK), erosion, and monocultures.


Examples of trace elements that have disappeared or decreased:

Zinc (Zn) → necessary for the immune system and hormones

Copper (Cu) → essential for iron absorption and energy

Selenium (Se) → antioxidant, thyroid function

Molybdenum (Mo) → helps with detoxification via liver enzymes

Manganese (Mn) → bone formation, blood sugar regulation

Iodine (I) → used to enter our food partly through the soil

Silicon (Si) → important for skin, hair, and connective tissue

Plants extract minerals from the soil: if those minerals are no longer there, they aren't in our food either.

2. Fulvic acid and humic acids

These are the natural "transporters" of minerals. They bind minerals to organic acids so that plants (and therefore we) can absorb them better.
In the past: abundantly present in dark, living soils rich in compost, leaves, and microorganisms.
Now: largely disappeared due to soil depletion, pesticides, and over-tilled land.

3. Microorganisms and fungi (soil life)

Healthy soils were full of mycorrhizal fungi, bacteria, and enzymes that converted nutrients into absorbable forms.
In the past: 1 teaspoon of healthy soil contained billions of living organisms.
Now: in intensive agricultural soil, that is often less than 10% of what it used to be.💡

Without this soil life, minerals remain trapped in the ground; plants cannot absorb them, so you don't get them either.
Humus is the dark, spongy material in fertile soil that retains water, nitrogen, and carbon.

In the past: Soils often contained 6–10% organic matter.
Now: In many arable soils, that is <2%.

Humus is literally the "bank account" of the soil; the less humus, the less nutritional value and resilience.

4. Natural humus (organic matter)


Humus is the dark, spongy material in fertile soil that retains water, nitrogen, and carbon.

In the past: Soils often contained 6–10% organic matter.

Now: In many arable soils, that figure is <2%.

Humus is literally the soil's "bank account"; the less humus there is, the lower the nutritional value and resilience.



5. Natural mineral balance

In the past, there was a natural balance between calcium, magnesium, potassium, sodium, phosphorus, etc. Today, synthetic fertilizers (NPK) cause an oversupply of a few elements, which blocks the absorption of others. For example, too much potassium inhibits the absorption of magnesium and calcium.

6. Traces of plant compounds and enzymes

Some of the bioactive compounds in plants (such as flavonoids, polyphenols, and antioxidants) are directly linked to soil health.
Less stress and less diversity in the soil lead to fewer protective compounds in plants, resulting in less potent nutrition.
Where soils were once living, mineral-rich, and microbiologically active, they are now often depleted, sterile, and dependent on synthetic fertilizers.
